Apple & Herb Stuffed Cod

INGREDIENTS
· 4 tbsp. olive oil, divided
· 1 medium apple, diced
· ½ yellow onion, diced
· ½ green bell pepper, diced
· 2 cups stuffing mix
· Celery salt (to taste)
· Black pepper (to taste)
· 1 tsp. dried sage
· ½ cup chicken stock
· 5 – 5 oz. cod fillets
· Garlic salt (to taste)
· Paprika (to taste)
INSTRUCTIONS
· Pre-heat oven to 400 degrees.
· In a large skillet, heat 2 tbsp. of olive oil. Add apple, onion, and bell pepper. Cook 2 – 3 minutes then add stuffing mixture. Season with celery salt, pepper, and sage. Mix well. Add chicken broth. Cook for 3 – 5 minutes until all stuffing mixture is moist and flavored. Set aside.
· Cut 2-inch slit into the side of each cod filet. Season both sides of fish with garlic salt, pepper, and paprika. Stuff 2 tbsp. of stuffing mixture into each slit.
· In another large skillet, heat remaining 2 tbsp. of olive oil on medium high heat. Cook stuffed fish for 2 minutes on each side. Transfer skillet to oven and cook for 10 minutes. Remove from heat. Serve.
