Panko Crusted Spicy Chicken Sandwich


Ingredients

Marinade

· 3 tbsp. olive oil

· 1 tbsp. seasoned rice wine vinegar

· 1 tbsp. lime juice

· 1 tbsp. kickin chicken seasoning

· 1 tbsp. sea salt

· 1 tbsp. garlic powder

· 1 tbsp. onion powder

· 1 tsp. chili powder

· 1 tsp. cumin


Chicken

· 6 boneless skinless chicken thighs

· 2 cups seasoned panko breadcrumbs

· 1 tbsp. Cajun seasoning

· 1 tbsp. smoked paprika

· 3 eggs


Sandwich

· 6 brioche buns

· Olive oil cooking spray (to taste)

· 1 tbsp. olive oil

· 1 large yellow onion, sliced

· 1 – 16 oz. bottle lite yum yum sauce

· 1 tbsp. kickin chicken seasoning

· Chipotle mayo (to taste)

· 1 romaine lettuce stalk, chopped finely

· 2 red beefsteak tomatoes, sliced



Instructions

· In a large bowl, whisk together all marinade ingredients.

· Place chicken thighs in a large Ziploc bag. Pour marinade over chicken and seal the bag. Mix well inside of the bag covering all chicken in marinade. Refrigerate for at least one hour.

· Preheat oven to 400 degrees.

· In a large bowl, combine breadcrumbs, Cajun seasoning, and paprika.

· In a medium bowl, beat eggs with 2 tbsps. of water.

· With one hand, cover a piece of chicken in egg batter. With the other hand, coat chicken with panko breadcrumbs. Place on a baking sheet lined with parchment. Repeat for each piece of chicken.

· Bake until cooked through and crispy, 20 – 25 minutes. Remove from heat.

· Spray olive oil cooking spray on the inside of each bun and place on a cooking sheet lined with parchment. Toast until slightly crisp, 2 – 3 minutes. Remove from heat.

· In a medium skillet, heat 1 tbsp. of olive oil on medium high heat. Add onions. Sauté until tender, 2 – 3 minutes. Remove from heat.

· In a medium saucepan, on medium heat, bring yum yum sauce and kickin chicken seasoning to a simmer. Once simmering, reduce to low.

· Assemble Sandwich: Apply chipotle mayo to both sides of the bun. On the bottom bun, add shredded lettuce, tomato, sautéed onions, and then panko crusted chicken. Add yum yum sauce on top of chicken to taste. Top with the top half of the brioche bun. Serve.
