Shrimp & Chorizo Tacos


Shrimp

· 1 lb. raw shrimp, tail off, peeled, & deveined

· 1 packet of taco seasoning

· Black pepper (to taste)

· 3 tbsp. of olive oil, divided

· 1 tbsp. vinegar

· 2 tbsp. hot sauce

· ¼ cup unsalted butter

· 1 tbsp. of lime juice

· 2 tbsp. fresh cilantro, chopped

Chorizo or Vegan Chorizo Crumbles

· 2 tbsp. olive oil

· ½ medium yellow onion, chopped

· 1 lb. ground Mexican chorizo

-Cacique (good pork brand)

-Morningstar (good vegan brand)

Make Your Taco Your Own

· Corn or flour tortillas

· Hard shell

· Shredded lettuce

· Pico de gallo

· Shredded cheese of choice

· Guacamole

Instructions


Shrimp

· In a small bowl, mix together taco seasoning, pepper, 2 tbsp. of olive oil, vinegar, and hot sauce. Pour mixture into a Ziploc bag. Add shrimp to the bag. Mix well and let marinate for 30 minutes. Drain marinade drippings before cooking shrimp.

· In a large skillet, heat 1 tbsp. of olive oil on medium high heat. Cook shrimp for 2 minutes on each side. Mix in butter, cilantro, and lime juice and cook for 2 – 3 additional minutes, stirring well. Remove from heat.

Chorizo or Vegan Chorizo Crumbles

· In a large skillet, heat olive oil on medium high heat. Add onion. Sauté 2 minutes then add chorizo. Cook for 7 – 8 minutes, stirring often like you’re browning ground beef. Remove from heat.

Make Your Taco Your Own

Assemble chorizo then shrimp in your tortilla or shell. Add the toppings of your choice. Enjoy!
